Italian Meatballs

Meatball Ingredients:

  • 1 pound ground pork
  • 1 pound ground chicken
  • 2 large eggs, lightly beaten
  • 1/4 cup grated Parmesan cheese
  • 4 cloves garlic, finely chopped and Sauteed
  • 1/4 cup dry bread crumbs
  • 1/4 cup finely chopped parsley

 

  • Salt and freshly ground pepper
  • 3/4 cup pure olive oil

 

For the Meatballs:

Combine all the ingredients in a medium bowl, except olive oil and season with salt and pepper to taste. Heat the oil in large saute pan over medium-high heat or in an electric skillet.   Roll the mixture into 1 1/2-inch balls and fry until golden brown – approximately 8 minutes.  Remove with a slotted spoon onto a plate lined with paper towels.

 

Makes 2 dozen meatballs
