Italian Pizzelle Cookies


3 eggs

¼ cup white sugar

½ cup butter, melted

1 T. Vanilla or Lemon Extract

1 ¾ cups all purpose flour

2 tsp. baking powder



In large bowl, beat the eggs, and sugar until thick. Stir in the melted butter and vanilla. Blend in the flour and baking powder into the batter and mix until smooth. You may need to add a few drops of water to get to desired consistency.

Heat the pizzella iron, and brush with oil or spray with a nonstick spray. Drop about 1 tsp to 1 T of batter onto each circle of the iron. You may need to experiment with the proper amount a few times. Bake for 30-45 seconds until steam comes to a stop out of iron. Carefully remove the cookies and cool.

You can sprinkle lightly with some powdered sugar. Enjoy!!
