½ cup sweet butter, softened at room temp
½ cup sugar
½ cup brown sugar
1 cup smooth peanut butter
½ tsp vanilla
½ tsp salt
½ tsp baking soda
1 ½ cups flour
Preheat oven to 375. Either butter cookie sheets or use parchment paper.
Beat, by hand, the butter until really softened. Add the two sugars until creamy. Add the egg, peanut butter, salt, baking soda and vanilla.
With a rubber spatula, fold the flour into this mixture, don’t overmix.
Roll the dough into small balls and place them on prepared cookie sheets. With a fork, press the balls into a criss cross pattern. Bake for 15-17 minutes until crisp and golden.
Let cool before eating!
