Oatmeal Chocolate Chip Cookies


1 stick butter, at room temp

1/2 cup dark brown sugar

1/2 cup white granulated sugar

1 egg, room temp

1 tsp vanilla

3/4 cups flour

1/2 tsp. baking powder

1/2 tsp cinnamon

1/2 tsp. salt

1 cup old fashioned oatmeal

3/4 cup chocolate chips


Preheat oven to 350 degrees. Prepare cookie sheets, laying out parchment paper.

In a large bowl, beat the butter, both sugars, until light and fluffy. Add in the eggs, one at a time on a lower speed with mixer,or by hand, and finally add in the vanilla.

Sift the flour, baking powder, cinnamon and salt together in a separate bowl.

Slowly add the dry ingredients into the butter mixture. Now, by hand, add in the oatmeal and chocolate chips and stir until incorporated using a large wooden spoon.

Using a small ice cream scoop or tablespoon, form into a ball and place on parchment paper. Flatten slightly with a damp hand, and bake for 12-15 minutes until lightly brown. Transfer to a baking rack to cool.

Makes 1 1/2 dozen cookies
