Chocolate Chip Zucchini Muffins


  • 3 cups grated fresh zucchini
  • 2/3 cup melted butter
  • 1 1/2 cups sugar
  • 2 eggs beaten
  • 2 tsp vanilla
  • 2 tsp baking soda
  • Pinch of salt
  • 3 cups all purpose flour
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 1/2 cup of chocolate chips


  1. Preheat oven to 350 degrees
  2. In a large bowl combine the sugar, eggs and vanilla. Stir in the grated zucchini. Next stir in melted butter.
  3. Mix in the flour, baking soda, nutmeg, cinnamon and salt.   When completely mixed by hand, add in the chocolate chip pieces.
  4. Coat your muffin pans with a canola oil or coconut oil spray, lightly. Bake muffins for approximately 20-25 minutes, until the middle bounces back when pressed and when they are golden brown.   Let cool at least five minutes before eating!
